Warm durra salad
with red cabbage, orange and feta cheese
Durra grains have a mild flavour and are an excellent substitute for rice, pasta, bulgur and couscous. It's handy to cook larger batches of durra and freeze them in meal-sized portions to simplify everyday cooking. In this salad, the durra is combined warm with red cabbage, orange and feta cheese – a delicious mix that works perfectly both as a main dish and as a side, for example with chicken.
Durra
- 2 dl da Carla organic Durra grains
- 5 dl water
- 1 vegetable stock cube, free from traces of gluten
Salad
- ¼ head of red cabbage
- 2 oranges
- 100 g feta cheese
Dressing
- 2 msk olive oil
- ½ msk vinegar
- 1 msk juice from orange
- 1 krm salt
- ½ krm freshly ground black pepper
Here's how
- Bring water and stock to the boil in a saucepan, lower the heat and add the durra grains. Cook according to the instructions on the packet.
- Rinse and finely shred the red cabbage.
- Cut away the peel from the oranges and slice them thinly. Squeeze a few orange slices to get 1 msk juice for the dressing.
- Mix the dressing ingredients and pour half the dressing over the warm durra, then stir through.
- Add a further ¼ of the dressing to the red cabbage and massage the dressing into the cabbage.
- Arrange durra, red cabbage, orange and feta cheese on a large platter and drizzle over the rest of the dressing.
- Serve the salad lightly warm.
