Gluten-Free & Vegan Mocha Squares
with sorghum flour
Kärleksmums – Swedish mocha squares, also known as chocolate squares or coconut squares – are a true fika classic! This version is completely gluten-free and vegan, baked with da Carla's sorghum flour for a moist, fluffy texture.
ingredients
Cake:
- 150 g dairy-free butter
- 2 dl plant-based milk (oat, cashew, almond or soy)
- 2.5 dl coconut sugar
- 2 tsp vanilla sugar
- 2 tbsp cocoa
- 2 tsp baking powder
- 4.5 dl da Carla sorghum flour
Icing:
- 150 g dairy-free butter
- 0.75 dl espresso
- 2 tbsp cocoa
- 5 dl icing sugar
- 1–2 dl desiccated coconut for topping
Instructions
- Preheat the oven to 200°C and line a baking tin (approx. 20x30) with baking paper.
- Melt the butter and stir in the plant milk.
- Mix the dry ingredients in a bowl.
- Pour the butter mixture into the dry ingredients and stir into a smooth batter.
- Pour the batter into the tin and bake in the middle of the oven for about 20 minutes.
- Meanwhile, make the icing: melt the butter in a saucepan and add the espresso, cocoa and icing sugar. Stir into a smooth icing.
- Spread the icing over the cooled cake and sprinkle with desiccated coconut.
- Cut into squares and enjoy!
