gluten-free cookies
These gluten-free cookies made with sorghum flour are easy to bake and perfect as a base recipe for any occasion. The sorghum flour not only gives a lovely texture but also a nutritional boost with fibre and minerals such as magnesium, iron and phosphorus. This is a basic recipe that you can easily vary to taste – try adding orange or citrus zest. For the photo, we decorated the cookies with sugar sprinkles before baking to make them a little more festive. But they are just as delicious exactly as they are. Perfect with your coffee or as part of the Christmas cookie spread!
Ingredients:
- 370 g da Carla sorghum flour
- 250 g butter
- 110 g sugar (equivalent to one level decilitre measure) or sugar substitute
- 1 tsp vanilla sugar
- 1 egg
Instructions
- Mix all the ingredients in a bowl and knead into a smooth dough. Let the dough rest in the fridge for about 30 minutes.
- Shape the dough into balls and place on a tray lined with baking parchment. Leave plenty of space between the cookies, as they spread – about 6 cookies per tray is just right.
- Heat the oven to 180°C and bake the cookies for 7–15 minutes, until the edges are golden brown.
- Let them cool completely on the tray before moving them, as they are very delicate while still warm.
