soft gingerbread cake
with light teff flour
Discover how easy it is to bake a soft, moist gluten-free gingerbread cake with our recipe featuring light teff flour from da Carla. This cake is naturally sweetened with fresh dates and tart lingonberries, creating a rich, deep flavour. The combination of teff flour and tapioca flour gives a fine texture, while egg whites whipped to a stiff foam add fluffiness. Perfect for the season's celebrations or as a special treat on colder days.
Batter
- 100 g fresh pitted dates
- 1 dl (50 g) lingonberries (or lingonberry jam with a high fruit content and less added sugar)
- 1 ½ dl water
- 2 tsp gingerbread spice
- ½ dl neutral oil
- 100 g (2 dl) da Carla organic light teff flour
- 50 g (2/3 dl) da Carla organic tapioca flour
- 1 tbsp baking powder
- 3 eggs
For the tin
- da Carla organic light teff flour
- cold-pressed coconut oil or another solid fat.
Method
- Preheat the oven to 175 °C.
- Grease and “flour” a cake tin holding about 1 litre, using the fat and teff flour.
- Combine the dates and water in a saucepan. Simmer for 2–3 minutes until the dates have softened. Blend the mixture until smooth with a stick blender. Add the lingonberries or lingonberry jam and stir. Stir in the oil and let the mixture cool slightly.
- Combine the teff flour, potato starch, baking powder and gingerbread spice in a separate bowl.
- Separate the egg whites from the yolks. Whisk the egg whites with an electric whisk until a stiff, white foam forms.
- Stir a little of the date and lingonberry mixture into the egg yolks. Then add the rest of the mixture and stir to combine. Fold in the flour and spice mixture and stir until you have an even batter.
- Gently fold the egg whites into the batter, one third at a time. Do not overwork it.
- Pour the batter into the tin and bake in the middle of the oven for about 25 minutes. Test with a skewer – the cake should be dry in the centre.
- Let the cake rest in the tin for about 5 minutes.
- Turn the cake out onto a wire rack and let it cool under a tea towel. Freeze whatever will not be eaten within a day.
